Description

Tightly wound fruit with great acid and a fruity burst of mouth coating raspberry and plum. Whole bunches make way for slight earthy notes and fine, savoury tannin with a cleaning acidity leaving your palate fresh and wanting more.

Vineyard

The vineyard is coastal and sits on a north facing slope. The maritime influence gives a temperature moderating effect and provides a daily, gentle sea breeze which reduces the risk of disease and keeps the site cool. This gives a more even diurnal temperature throughout the growing season which is fantastic for ripening. This, along with cool nights help retain freshness and acidity to the wines. The soils are gravel threaded clays that give the wines a lovely textural element.

Viticulture

We farm the vineyard organically (Biogrow certified). The vineyeard is two cane VSP. We focus on vineyard health throughout the season starting with soft-pruning techniques to maximise sap flow and promote vine longevity. Cultural practices including shoot thinning, leaf plucking and fruit thinning promote well balanced vines that produce high quality grapes.

Vinification

Individual parcels were vinified separately:

777 - 35% Whole Bunch fermented for 9 days with daily pump overs. 10/5 - De-stemmed and fermented for 11 days with daily pump overs. Clone 5 - De-stemmed and fermented for 10 days with 1 daily pump over 115 - 50% Whole Bunch and feremented on skins for 9 days with daily pump overs. Clone 6 - De-stemmed and fermented for 9 days with 1 daily pump over

After individual ferments had been pressed they were left to finish in tank before being pressed to old french barriques.

Maturation

These wines were aged on fine lees for 9 months before being racked to stainless steel and aged for a further 2 months before being bottled.
