Description

Experience a quintessential hand-picked Merlot Cabernet from the Hawke’s Bay. Careful pressing, fermented and aged in French barriques has resulted in a full and rich wine with aromas of cassis, nutmeg, and ripe blackberries. The palate shows good richness and texture with supple tannin and light acidity. Fermentation: The juice for this wine was hand picked and chilled overnight. The berries were then cold soaked before being added along with some whole bunches to open top fermenters. The fermentation was cool to moderate, and the fruit pressed when dry.

Vinification

Transferred to fermenter with a light crush, some whole bunches interspersed. Cold maceration five days before inoculation. Hand plunging during fermentation. Post-ferment maceration up to two weeks.
